Oklahoma’s Black-eyed Peas

Black-eyed Peas – like the ones from Oklahoma ­ – not only provide 11 grams of protein in one cup, they’re also loaded with folate and fiber – which can help reduce cancer. Black-eye peas fuel red blood cells with iron and help maintain bones and teeth with their abundance of calcium. Most often eaten cooked with bacon or ham, try this fresh salad version:

1 can black-eyed peas

4 oz canned artichoke hearts

¼ cup mint, chopped

1 onion, chopped

2 cloves garlic, chopped

2 tbsp balsamic vinegar

1 tbsp olive or grape seed oil

1 tsp Worcestershire sauce

salt and pepper to taste

Rinse black-eye peas and strain. Slice artichoke hearts. Combine all ingredients together. Serve over your favorite mixed greens or just plain on a plate.
