Virginia’s Peanuts

Peanuts are more than just a simple snack, they’re actually heart-healthy thanks to their generous supply of monounsaturated fats. Rich in oleic acid – the same healthy fats in olive oil – peanuts are a powerful antioxidant that can help prevent certain types of cancer, including colon cancer. They can also help prevent alzheimer’s and age-related cognitive decline. Here’s an easy way to make a simple, spicy sauce to pour over rice, drizzle over grilled meat or use as a dip.

Simple Spicy Peanut Sauce

½ cup peanuts

2 tbsp low sodium soy sauce

1 tbsp agave nectar

½ cup water

1 tsp dried chili

1 clove garlic

Put all ingredients in a food processor and pulse to combine. Consider using peanut butter and combining in a bowl if no food processor is available.
