Maine’s Wild Blueberries

Wild Blueberries – like the ones that prosper in Maine – are bursting with 32% daily Vitamin K. They’re also loaded with the antioxidants like anthocyanins – which give them their deep color – that reduce inflammation and neutralize other free radicals that damage cells. Besides enjoying the health benefits of wild blueberries as a dessert, here’s a savory way to enjoy them as a complement to any meat dish:

Wild Blueberry Compote

3 cups wild blueberries

3/4 cup grape juice

2 tsp balsamic vinegar

1 tsp agave nectar

4 tsp corn or tapioca starch

¼ tsp salt

Bring ½ cup grape juice and wild blueberries to boil over low heat. Simmer until berries are softened. Add balsamic vinegar, agave nectar and salt to mixture. Mix ¼ cup grape juice with starch and mix in a small bowl. Pour into sauce  and stir continuously on low until thickened. Pour over chicken, beef or pork.
