Louisiana’s Sweet Potatoes

Sweet potatoes – like the ones that prosper in Louisiana – are loaded with beta-carotene, antioxidants and carotenoids that help protect the eyes and stabilize blood sugar. Baked Sweet Potato Fries

5 sweet potatoes

2 tbsp olive oil

2 tbsp kosher salt

2 tbsp black pepper

2 tbsp garlic powder

2 tbsp paprika

2 tbsp rosemary

Slice sweet potatoes in strips – as thin or as thick as desired. In a large bowl or a sealable storage bag, thoroughly mix sliced sweet potatoes with olive oil. Once coated, mix with dry spices. Spread potatoes in a single layer on a lined baking sheet. Bake 20 minutes – depending on thickness – or until tender and golden brown.
