Wisconsin’s Cranberries

Cranberries prosper in Wisconsin at the rate of nearly 5 million barrels of the tangy berries each year – making the state the number 1 producer in the country. That’s great because they’re popping with phytonutrients that are not only powerful antioxidants, they also help reduce inflammation and can help prevent cancer. The proanthocyanidins in cranberries help reduce infections, such as urinary tract infections and other conditions caused by bacteria. They’re also wonderful to help improve cardiovascular health. While the tart tang might be too much for some, try this delicious way to incorporate cranberries into your diet.

Spicy Cranberry Salsa

8 oz fresh cranberries

1 cup water

¾ cup chili sauce

1 tbsp agave nectar

2 tsp lemon juice

Pulse all ingredients in a blender or food processor – leaving the cranberries slightly chunky. Simmer over low heat until thick. Pour over savory meat dishes such as roasted pork, spread on sandwiches or mix with yogurt for a whole-wheat cracker dip.
