We constantly hear that eating vegetables is good for us. Even as children, we’re coaxed into eating our vegetables with the reward of a delightful dessert. Then as adults, our doctors tell us we should be eating more vegetables. The result? Most people still don’t eat enough vegetables each day. Teeming with countless nutritional benefits, each colorful variety of produce features a host of vitamins and antioxidants – plus fiber. During National Fruit and Vegetable Month, try to make a concerted effort to limit meat servings to 4 ounces – about 24 grams – per meal, or give meatless ‘meat’ and tofu a try. Start thinking of meat as the complement to a plate piled high with bright and beautifully delicious vegetables.
